Everyone has a passion or a hobby. If you don’t know yours perhaps you are yet to discover what it is. For Jessica, the ‘Mad Hatter’ behind Mad Hatter Cupcakery, it was giving up the stresses of the corporate world to pursue her passion for cooking by challenging conventional egg and dairy baking.
With flavours such as salted caramel popcorn and lemon meringue, you’d never guess that all of the Mad Hatter Cupcakery’s products are 100% vegan
The leap of faith paid off for Jess because the Mad Hatter Cupcakery has become Australia’s first vegan patisserie. How great would it be to be the first at something by taking such a leap of faith? But getting our priorities straight, let’s talk about the C-A-K-E-S.
Experimentation is high on the ingredients list with flavours such as salted caramel popcorn, lemon meringue and gai-time inspired by your favourite childhood ice-cream. Seasonal flavours appear weekly, which only gives you more incentive to visit every week – if not every day. And if you needed any more reasons to try some out, all of the cakes are 100% plant based – so no dairy, eggs or animal products. The custom made margarine has no palm oil, therefore less saturated fats + no cholesterol = more cake.
